She added to her silver in the team pursuit and took New Zealand's medal tally to 20 - 10 gold, seven silver and three bronze - tied with Tokyo 2021 for the biggest collective haul at a Games.
The country is 11th on a table topped by the United States with 40 gold and 126 medals overall.
Wollaston lapping the field twice to pick up 51 points in the final leg of the omnium.
Meanwhile, Ellesse Andrews secured a 10th gold medal for New Zealand via the sprint, adding to her win in the keirin and silver in the team sprint.
So what was she listening to with the headphones on in the warm-up?
New Zealand's previous best gold medal haul at a Games was eight at Los Angeles in 1984.
