    Quick and easy summer dinners

    The busy end of year calls for simple dinners that are ready in 35 minutes or less.


    The busy end of year calls for no-fuss dinners. 

    Here are five that are ready in 35 minutes or less, including two no-cook options for when it's too hot to cook or when you only have time to assemble a meal.

    Enjoy mangoes for dinner alongside salty grilled haloumi and an avocado and cucumber salsa. Most of the prep is chopping, with the tacos ready in 30 minutes. 

    This zucchini spaghetti takes 30 minutes and can feed up to six. It's made with pantry ingredients, including olive oil, spaghetti, lemon and chilli flakes.

    Prepping dinner in a hurry? Go with this no-cook option made with tinned tuna and chickpeas. It's a hearty yet healthy option, with avocados adding creaminess and quick pickled onions adding zing.

    Grab a supermarket barbecue chicken and make refreshing rice paper rolls with crunchy fresh veggies and sliced mangoes. Serve with a quick and creamy tahini sauce. The whole meal is ready in 20 minutes.

    One steak goes a long way in this salad served with avocado, grilled corn and lime. There's minimal cooking in this recipe, making it perfect for hot nights. The veggies are also flexible, so use what you have.
